With a calendar full of houseguests right through Labor Day, organization is key. This year, my lodgers will be a myriad bunch—from pals who plan to stay a couple of weeks to families that need a place to crash for one night before they catch a plane. And they'll all need to shower, sleep, sign on to the Internet (I have cards with my password printed on them so that I don't have to read it off the DSL box every time), and, of course, eat. For the last one, I'm putting together and even freezing a lot of make-ahead, heat-and-serve one-dish meals so that I don't spend the rest of the summer at the sink or the stove.
