Roasting vegetables brings out their rustic appeal, aided here by the tang of lemon and a few sprigs of tarragon.
Ingredients
- 1 lb. asparagus
- 1 Tablespoon vegetable or olive oil
- 2 teaspoons salt
- black pepper
- 4 sprigs tarragon, chopped
- 1 lemon
Directions
step 1Cut the woody base (approximately 1 inch) off the asparagus spears.
step 2Toss the asparagus in a bowl with the oil, salt, and pepper.
step 3Lay asparagus in a single layer on a cookie sheet and roast in a 350°F oven for 30-35 minutes.
step 4Squeeze lemon over asparagus, sprinkle with chopped tarragon, and serve.
