Ingredients
- 1 medium Jicama
- 1 Coyote Squash
- 2 carrots
- 1/2 cup salsa, no sugar added
- 1 cup sweet potato crunchies, recipe for sweet potato crunchies
Directions
Peel all vegetables and dice. In a medium mixing bowl, toss vegetables to combine. Add 1/4 recipe to salad plate, top with 2 tablespoons salsa and 1/4 cup sweet potato crunchies.
