Easy Egg Casserole

 

 

Directions

 
Preheat oven to 375°F. Lightly coat an 8x8 casserole dish with nonstick spray. Arrange the ham, potatoes, spinach, and cheese in the bottom of the casserole dish. Beat the eggs and milk together in a large bowl and pour over the ingredients in the casserole dish. Bake 25 to 30 minutes or until lightly browned and puffed. Serve immediately with a glass of milk.
Makes 6 servings

Ingredients

1 cup - cubed lean ham
1 cup - frozen seasoned potatoes (with onions and peppers)
¾ cup - frozen chopped spinach
½ cup - lowfat shredded Cheddar or Swiss cheese
6 - eggs
¾ cup - lowfat or fat free milk

Nutrition

260 calories; 9 g fat; 3 g saturated fat; 345 mg cholesterol; 23 g protein; 21 g carbohydrates; 2 fiber; 590 mg sodium; 200 mg calcium (20% of daily value). Nutrition figures based on using fat free milk.
