8 Reasons Why Pumpkin Seeds Rock our Socks

'Tis the season for all things Halloween, which means 'tis also the season for carving pumpkins, which is a pretty big deal. You have to choose the best pumpkin in the patch. Pumpkin-proof the whole house. Then, scoop out those pumpkin innards.
This year, you might want to reconsider throwing out this cold, mushy stuff. It's full of pumpkin seeds, which are actually really good for you. Here's a laundry list of reasons to love them:
  • They're loaded with natural anti-inflammatory benefits
  • They promote prostate and bone health
  • They're a great source of healthy minerals (like Zinc and Magnesium), protein, and monounsaturated fat
  • They're rich in phytosterols, which lower cholesterol
  • They help improve bladder function
  • They help protect against osteoporosis
  • They contain Vitamin E: a powerful antioxidant
While you can technically eat them raw, we highly suggest roasting them first. Just place them in a single layer on an oiled baking sheet, sprinkle with salt, and bake at 325°F for about 25 minutes, stirring occasionally to avoid burning them.
Voila. You've got a healthy, homemade—not to mention basically free—snack.

Once you've got a handle on roasting, why not try them in different dishes? Here's a good place to start your pumpkin seed recipe collection.

Remember, next time you find yourself elbow-deep in pumpkin guts (which will probably be sometime in the near future) don't toss them. Bake them.
