Simple Vegan Vanilla Icing

Spoiler alert, sweetie.

You can make simple vegan vanilla icing with ingredients you probably already have in your kitchen.

This month I had a holiday party with friends, and we decided to bake and decorate some oh-so-delicious cookies. (Who doesn't love biting off a snowman's head?) In a rush, I went to grab the pre-made icing at the store, but then I read the unpronounceable chemical crap ingredients: Diglycerides? Polysorbate 60?

No thanks, Santa.

And if you're decorating? Avoid sprinkles that contain "gelatin" or "confectioner's glaze" (derived from insects--gross!). Opt
instead for naturally colored sugar crystals. For frosting, try this simple and chemical-free version as you finish up your holiday baking:

What You Need

Makes enough icing for 18 cookies

1 1/2 cups powdered sugar
1/4 cup vegan butter
1/2 tablespoon vanilla extract
2-3 tablespoons water

How to Make It

Add powdered sugar, vegan butter and vanilla in a large bowl. Slowly mix in water one tablespoon at a time until desired consistency is reached. Mix for about 1 minute with electric mixer. Devour.
