It's almost here and we want to wish you a Happy St. Patrick's Day!
Today, We ♥ Food Friday is all about going GREEN with some of your faves ;)
We're always sharing tips on eating Lean, Clean & Green ~  green veggies add so many nutrients to your diet, while giving you a boost of energy and healthy, glowing skin! Yes, that's right! Green veggies pack a powerful punch and these fun recipes are a great way to celebrate this Irish holiday...

Protein Paddy Cakes
Who would have thought that you could make your pancakes BRIGHT green and still super tasty! You definitely won't be able to taste the difference... It's actually a great way to add some greens to your breakfast... you might even like them better than your normal pancakes ;)
Spinach for breakfast? It may seem a little strange, but it actually doesn't change the flavor of the pancake at all! It does add loads of vitamins and minerals though... not to mention the perfect green coloring :)
Here are the Perfect Fit Protein Paddy Cakes ingredients:
  • 1/2 banana
  • 3 egg whites
  • 1/2 Tbs. Almond Milk
  • 1 scoop Perfect Fit Protein
  • 1/2 Cup Spinach
Place banana, Perfect Fit, egg whites, spinach and almond milk into a blender. Puree until smooth. Now, your batter is ready :) Generously spray a small, round skillet with non-stick cooking spray and place over low to medium heat. Once warm, carefully pour the batter into the skillet. Cook on low, about 5 minutes per side. Carefully flip the pancake and cook on the other side until just barely golden. Remove from heat and serve with fresh fruit (we picked kiwi for the green!) and top with raw honey, real maple syrup or agave.
Want to make waffles? Use the same ingredients ~ Just put it in your waffle maker!
Shamrock Roll
  • 1 large Collard Green Leaf, rinsed
  • 1/4 Cup Quinoa, cooked
  • 1/4 Avocado, thinly sliced
  • 1/4 Cup Cucumber, thinly sliced.
  • 1/4 Cup Carrot, shredded
  • 1 lime
Spread Collard Leaf flat out on a plate. Spread a thin layer of cooked couscous or quinoa across the collard leaf. Place the sliced veggies on top and squeeze the juice of one lime over the veggies. Tightly roll up the collard leaf until you have a neat roll. Stick toothpicks all the way through the the roll at 1 inch intervals. Cut the roll into sections between the toothpicks. Serve the section like mini sushi rolls!
If you are just making this for yourself you can eat it as a whole wrap instead of cutting into sections.
Kiss Me I'm Irish Smoothie!
  • 1 spear or piece of pineapple
  • 1/2 a banana
  • 2 cups of spinach
  • A few splashes of coconut water (we use Zico!)
  • Clover for garnish only ~ optional :)
Add all ingredients into your blender and blend, baby! Remember to do your shake dance ;) If your blender is having a hard time, add a bit more coconut water.
Kiwi Cocktail

  • 1 oz. Vodka (or clear liquor of choice)
  • 1 Kiwi, peeled and sliced
  • 2 oz. Almond milk
  • 1 Tbs. fresh Mint leaves, chopped
  • 1 Lime
Add kiwi, mint and almond milk into a blender. Puree to form a smooth blend. Pour into a martini glass and garnish with lime slice, kiwi slice and/or mint leaves.
If desired you can add club soda to make this drink a lightly carbonated spritzer. Just leave out the liquor and triple ingredients for a smoothie!
Irish Coffee
  • 6 oz. Strong Coffee
  • 2 oz. Vanilla Almond Milk
  • 1 oz. Peppermint Schnapps
  • Brew coffee as desired. Add in almond milk and schnapps. Stir and drink.
