Tofu Thai Peanut Lettuce Wraps

Bored with lunch?

These tofu wraps are just a few ingredients, a cinch to make ahead and they're deliciously perfect when you can't stand the thought of another sandwich. Enjoy!

What You Need

Lettuce leaves, for wrapping (you can use romaine, kale, butter lettuce, etc. I like mine best with butter lettuce)
1 red bell pepper, diced
2 carrots, shredded (or, if you’re me, throw half a bag of baby carrots in the food processor so you have extra!)
2 green onions, diced
1 block tofu, drained, patted dry and cut into ½-inch cubes
1 cup raw cashews
1 TBS peanut butter
1 tsp rice wine vinegar (plus more for tofu marinade)
1 tsp chili sauce  (plus more for tofu marinade)
½ cup water
1 clove garlic
Salt, to taste

How to Make It

In a wide, shallow bowl (I use a 9×13 glass pan) marinate chopped tofu in a mixture of rice wine vinegar and chili sauce. I confess, I never measure with tofu marinades–just use enough rice wine vinegar so the tofu has something to sit in, but it doesn’t need to be covered. I use about a teaspoon of chili sauce.

Let tofu sit overnight or for an hour or two. Drain when ready to use. (Note: You don't have to marinate tofu if you're running short on time. It just adds a lot more flavor.)

Add the cashews, peanut butter, rice wine vinegar, chili sauce, water and garlic to a blender. Puree until smooth, adding more liquid if necessary. Add salt, puree and taste. Add more if needed.

Spread a generous layer of sauce on a lettuce leave, top with tofu and veggies, wrap up, and enjoy!
