Happy National Rum Day! Luckily this boozy holiday falls on a Thursday (unlike this year’s tequila Tuesday) so we can really celebrate. Personally I’m not one for rum, not to say I don’t enjoy the occasional poolside piña colada, but today I’m sharing a few of my favorite not quite as bad for you rum recipes in honor of the Caribbean spirit.
DonQ Skinny Colada

Ingredients:
1 ounce pineapple juice
2 ounces DonQ Coco rum
1/2 ounce coconut milk
Pineapple wedge and coconut flakes for garnish

Directions:
Shake all ingredients with ice. Strain into a highball glass with ice. Garnish with pineapple wedge and dry coconut flakes.

Mojitos are one of the lower calorie rum drinks out there. This one gets an upgrade with muddled raspberries and a splash of champagne

¾ ounce fresh lime juice
3/4 ounce simple syrup
ice
4 raspberries
bunch fresh mint
splash Champagne or sparkling wine

Directions:
Muddle raspberries first, then mint. Add rum, lime juice, simple syrup, and ice. Shake vigorously. Strain into a Collins glass filled with ice. Top it with a splash of champagne or sparkling wine.
Watermelon DonQ-iri
Fresh juice and watermelon puree keep this daiquiri light and refreshing, not overly sweet and sticky

Directions:
To make the watermelon puree, dice seedless watermelon into cubes and blend until pureed.

To make the watermelon puree, dice seedless watermelon into cubes and blend until pureed.
Shake rum, lime juice, agave nectar, watermelon puree, and ice. Strain into coupe glass rimmed with pearl sugar. Garnish with thinly sliced watermelon.
Ginger Strawberry Rumble (pictured)
Serve this sophisticated skinny rum cocktail in a double old fashioned glass to complete the look
Ingredients:
2 ounces Appleton Estate Reserve
muddled strawberry
½ ounce fresh lemon juice
¾ ounce Canton ginger liqueur
crushed or pellet ice
Sliced strawberry & ginger candy for garnish
Directions:
Muddle fruit, add the rest of the ingredients and shake with two ice cubes. Pour into double old fashioned, or any 12-14 ounce, glass. Top with crushed or pellet ice and garnish.

1/2 cup fresh orange juice
1 ounce agave nectar
1 package blueberries
12 sage leaves
2 bottles diet ginger beer like Barritts's or Regatta

In large pitcher, muddle the berries and sage together. Then add remaining ingredients with ice and stir very well.
