Curried Sweet Potato Dip

The sweet potato is fall's darling.

Rich in beta-carotene and vitamin C, it's the perfect player to add to your cool-weather meal rotation. The best part? Sweet potatoes won't spike your blood sugar levels like regular white potatoes, so get over your carb-phobia and get jiggy with this veggie.

What You Need

1 sweet potato, baked and diced
1 14.5-ounce can of chickpeas
1 tablespoon red curry paste
1 teaspoon roasted red chili paste
2 cloves garlic, minced
1 teaspoon cumin
1 tablespoon olive oil
Sea salt, as desired
Parsley, for garnish

How to Make It

Add all ingredients to a food processor or high-speed blender. Pulse until completely smooth. Serve with veggies, crackers or chips. Enjoy!
