Holiday Recipe: Hearty Vegan Pot Pie

Holiday Recipe Week, Day 5: Hearty Vegan Pot Pie

You thought your pot pie days were over.


But you thought wrong, cupcake. This recipe is hearty and flavorful but packed with veggiesperfect for fooling the kiddos or your meat-eating man. Eat up!

What You Need
1½ packages of firm tofu, drained, patted dry and cut into ½-inch cubes
2 small sweet potatoes, diced
1 cup of chopped carrots
3 cloves garlic, minced
1½ cups of chopped chard
½ onion, diced
2 9-inch vegan pie crusts (or you can make your own)
Salt & pepper
Olive oil
1⅓ cup water
½ cup nutritional yeast
¼ cup flour
3 tablespoons olive oil
2-3 tablespoons soy sauce
¼ teaspoon salt
⅛ teaspoon pepper

How to Make It

Preheat oven to 350 F.

Heat a large pot of water. Boil carrots and sweet potatoes for about 10-12 minutes.

Meanwhile, warm olive oil in a large saute pan. Toss cubed tofu with a little nutritional yeast (just enough to coat–this will help it fry up with some flavor). Saute onions and garlic for a few minutes; add tofu to pan, season with salt and pepper, and cook for another 7-10 minutes or so.

When potatoes and carrots are done boiling, drain and add to saute pan with tofu. Add chard and stir, cooking for another few minutes until chard has cooked down. Remove from heat.

Mix gravy ingredients (last 7 ingredients, from water to pepper)  in a sauce pan over medium-high heat, stirring constantly until it thickens (about 7-9 minutes).

Taste gravy and tofu mix. Add more seasoning if desired. Add half of gravy to tofu mix and stir. Spoon tofu mix into 1st pie crust. Add rest of gravy to the top and cover with second pie crust.

Bake for 1 hour. Let sit for 10-15 minutes before serving.

Holiday Recipe Week, Day 4: Coconut Bliss Balls

Does the thought of eating another Christmas cookie make you want to vomit?


These mildly sweet treats are healthful enough that they’re not just for dessert–they pack a powerful punch of goodness to be enjoyed anytime. Perfect for no-fuss potlucks this week. Thanks to Crystal at Wild Herbivore for the recipe!

What You Need

1 cup rolled oats
1 cup unsweetened shredded coconut
1/2 cup ground flax seeds
1/2 nut butter (almond, soy, peanut)
1/3 cup agave nectar (liquid sweetener, maple syrup, honey)
1/2 teaspoon vanilla

How to Make It

Mix dry ingredients in a large bowl. Mix wet ingredients in a smaller bowl. Fold wet mixture into dry mixture and chill for 30 minutes. Press into balls, place on wax paper and chill for another hour before serving. Enjoy over and over again!

Christmas may be all about tamales, but we're hot and bothered over these stuffed peppers. 


Mix up the spices or add vegan chicken for a variation. Thanks to Gina from Gina's Vegan Veracity for the recipe!

What You Need

1 package of vegan crumbles (or any vegan meat substitute, crumbled)
2 cups corn (fresh, canned, or frozen)
2 cups cooked black beans
1 small chopped onion
2 tablespoons grape seed oil, divided
4 cups salsa, divided
1 cup corn meal
1 cup water
1 package vegan taco seasoning
1 cup mini pasta shells or orzo
8 green peppers (halved lengthwise with stems and seeds removed)
1 package vegan cheese shreds
1 container vegan sour cream
1 bunch chopped green onions

How to Make It

Preheat oven to 350 degrees.

Use half of the grape seed oil to grease a 13 by 9 inch baking pan. In a large pot, add the other half of the grape seed oil and onion. Cook until soft, about four minutes.

Add the vegan crumbles and cook until browned. Add corn, beans, shells, taco seasoning, water and half of the salsa. Bring to boil. Remove from heat and stir in corn meal.

Fill each pepper half with equal amounts of mixture. Cover and bake 1 hour and 15 minutes or until peppers are soft.
Remove from oven and top each pepper with salsa, sour cream, cheese and green onions .

14 ounces Acai puree, thawed
2 medium bananas, sliced
10 medium strawberries, sliced
2 limes, juiced
1/4 cup agave syrup (or to taste)

Add the Acai puree, sliced bananas, sliced strawberries, lime juice, and agave syrup to your blender. Blend until smooth. Taste, and add more agave or lime juice as necessary.

If you have a sorbet or ice cream maker, follow the instructions on your machine.

Otherwise, pour the puree fruit into a baking pan and place in the freezer. Stir every 20 minutes until set.

Serve immediately, or transfer to a lidded container and store in the freezer.

Ingredients:

8 tsp. olive oil, divided
1 large shallot, finely chopped
2/3 cup fresh bread crumbs
1/3 cup shredded Asiago cheese
3 Tbsp. low fat mayonnaise
2 Tbsp. fresh lemon juice
2 Tbsp. finely chopped red bell pepper
2 Tbsp. finely chopped Italian parsley leaves
1 Tbsp. Dijon style mustard
1 egg, beaten
1/2 tsp. salt
2 (6 oz.) cans lump crab, rinsed, drained, picked through for shells and squeezed dry
1 ripe, Fresh Avocado, seeded, peeled and finely chopped
6 cups mixed greens
6 oranges, peeled and thinly sliced
1/3 cup prepared balsamic salad dressing

Instructions:

In small skillet, heat a little less than 1/3 of the oil over medium heat. Add shallots and sauté for 2 minutes.
In large bowl, combine shallots, bread crumbs, cheese, mayonnaise, lemon juice, bell pepper, parsley, mustard, egg, salt and crab. Cover and refrigerate to allow flavors to blend.
Stir in avocados. Form crab mixture into 12 cakes and chill for 30 minutes.
In large skillet, heat remaining oil over medium heat. Add crab cakes and cook for about 3 minutes or until browned, turn and brown other side.
Serve on a bed of greens and sliced oranges drizzled with dressing.

Instructions:
1. Combine the olive oil and pancetta in a small saucepan over medium heat. Cook, stirring frequently, until pancetta is golden and crispy. Strain the pan drippings into a small bowl and leave the crispy pancetta off to the side to cool. Add the Champagne vinegar, maple syrup, salt and pepper and whisk well.
2. Combine the radicchio, kale, apples and pecans in a large bowl. Toss while adding the dressing, little by little, until salad is well dressed. Taste and adjust seasoning with salt and pepper. Garnish with crispy pancetta.

1 cup sliced carrot (1/4 inch thick)
1 medium red bell pepper, cut into 1/4-inch-wide strips
1 1/2 cups fresh corn kernels (from 2-3 medium ears; see Tip)
2 cups shredded romaine lettuce (about 4 medium leaves)
PREPARATION
1. Combine rice wine (or sherry), soy sauce and sesame oil in a small bowl. Combine salt and sugar in another small bowl.
2. Heat a 14-inch flat-bottomed wok over high heat until a bead of water vaporizes within 1 to 2 seconds of contact. Swirl in 2 teaspoons peanut (or canola) oil. Add ginger and jalapeño and stir-fry until fragrant, about 10 seconds. Add carrot and stir-fry 1 minute. Swirl in the remaining 1 tablespoon peanut (or canola) oil, bell pepper and corn, sprinkle on the salt mixture and stir-fry until the vegetables are almost crisp-tender, about 2 minutes. Add lettuce, swirl in the rice wine mixture and stir-fry until the lettuce is just limp, about 30 seconds.

Basic Roasted Beets Recipe:
INGREDIENTS -
3 medium beets (about 1 1/2 pounds)
1 tablespoon olive oil
Salt
Freshly ground black pepper

INSTRUCTIONS -
Heat the oven to 375°F and arrange a rack in the middle. Rinse the beets and trim off any leafy tops. Wrap completely in aluminum foil and place in the oven. Roast until tender and easily pierced with a knife, about 1 to 1 1/2 hours. Remove from the oven and let cool.

When the beets are cool enough to handle, peel using a paring knife or by pushing the skin with your fingers.
Slice the beets, drizzle with olive oil, and season with salt and freshly ground black pepper.

Recipe for Creamy Cabbage Soup:
1 tablespoon extra virgin olive oil
1 medium onion, chopped
1 russet potato, peeled and grated
3/4 pound cabbage (about 1/2 medium head), cored and shredded
Salt to taste
5 cups water, chicken stock or vegetable stock
1 Parmesan rind
Freshly ground pepper to taste
2 cups low-fat milk
1 cup grated Gruyère cheese
For garnish:
6 1/2-inch thick slices of French or country bread, toasted and cut into small squares
Minced fresh chives

1. Heat the oil over medium heat in a large, heavy soup pot. Add the onion and cook, stirring, until tender, about 5 minutes. Add the grated potato, the shredded cabbage and 1/2 teaspoon salt. Stir together for a minute, taking care that the potatoes don’t stick to the pot, and add the water or stock, the Parmesan rind and salt and pepper to taste. Bring to a simmer, cover and simmer over low heat for 30 minutes, until the vegetables are tender.

2. Add the milk to the soup. Stir to combine well and heat through without boiling. A handful at a time, stir the Gruyère into the soup and continue to stir until the cheese has melted. Taste and adjust seasonings. Remove the Parmesan rind. Serve, garnishing each bowl with a handful or toasted croutons and a sprinkling of minced chives.

Tilapia w/ Cayenne Peppers, Spicy Noodles & Kidney Beans Recipe:

Ingredients
• 4 2.5 ounce tilapia filets
• 2 cayenne peppers, diced
• 1 can red kidney beans (15 ounces)
• 1 cup egg noodles, cooked and drained
• 3 tablespoons chili sauce
• 2 tablespoons chili powder
• 2 tablespoon olive oil
• Breading for tilapia

Cooking Directions:
1. In a sauce pan, combine kidney beans, chili sauce, chili powder, and olive oil. Heat to medium, then reduce to simmer.
2. Add noodles and cayenne peppers, then stir.
3. Meanwhile, very lightly bread tilapia (simply dip them wet into a bowl of breading). Fry in spray oil over medium heat about 5 minutes, then flip and fry another 2-3 minutes, or until cooked through and white and flakey.
4. Transfer kidney bean and noodle mixture to two bowls and top each with two tilapia filets.
5. Garnish with whole cayenne peppers and serve!

Chia Banana Date Cookies Recipe:
Makes 16 cookies
Ingredients
4 Tablespoons of white chia seeds
4 Tablespoons of plain flour
Half a small ripe banana
2 tablespoons of chopped dates
2 Tablespoons of rolled oats
1 large egg
2 tablespoons of honey
1 and a half teaspoons of baking powder

Method
Grind the seeds and the flour together. This makes the seeds grind easier and aerates the flour. Put this mixture into a bowl and add the rolled oats. Blend together the banana, egg, dates, honey, baking powder and water. Add this to the dry ingredients in the bowl. Mix together. The consistency should be similar to a cake batter but not as runny as a pancake mix. Drop dessertspoons of the mixture on to an oiled tray. Bake in a medium oven for 15 to 20 minutes, until lightly browned.

Homemade salsa recipe:
Number of Servings: 4

Ingredients:
2 Cups Ripe Red Tomatoes
1 Cup Onion (red or white or combo of both)
8 Tbsp Fresh Cilantro

1 tablespoon finely chopped fresh ginger

1 lb organic cranberries

2 cups fresh made apple juice

Directions:

Put chopped apples in a bowl and toss in the cinnamon, cloves and allspice. In a saucepan bring fresh apple juice to a boil and add cranberries, apples, and coconut sugar, stir well. Lower heat and stir frequently. Keep on low heat and keep stirring until sauce thickens. Once thickened remove from heat and cool. You can store in fridge a day or two before Thanksgiving and it tastes even better. If you like sweeter add more coconut sugar.

Preparation
• Preheat oven to 450°. Line a large rimmed baking sheet with parchment paper. Stir first 3 ingredients in a large bowl until sugar dissolves. Add pineapple; toss to coat. Let marinate, tossing occasionally, for 10 minutes. Place pineapple, one flat side down, on prepared sheet; reserve marinade.
• Roast pineapple for 15 minutes. Turn, brush with marinade, and roast until tender and caramelized, 10–15 minutes. Drizzle remaining marinade over; let cool slightly.
• Divide pineapple among plates. Spoon crème fraîche alongside. Garnish with nuts and mint.

While cardio is essential for heart health and tiny weights may help you tone, there are lots of serious, science-backed reasons to add heavy weights to your regimen. (And no, you won't end up looking like a body builder. That's actually a full-time job.)

"Lifting heavy weights—about 8-15 pounds for women is fine and up to 25 is ideal—is the most efficient and effective way to build muscle mass," says Joey Gonzalez, owner of Barry's Bootcamp New York.

1. Toned arms are hotMost women are afraid to "bulk up." But trust us: Unless you're hitting Crossfit twice a day and subsisting solely on whey protein, it's going to be seriously difficult to do. "Women typically don’t gain size from strength training—they have 10 to 30 times less of the hormones (including testosterone) that cause muscle hypertrophy," says Gonzalez. 2. Heavy weights are crucial for weight loss
"Generally speaking, for each pound of muscle you gain, you burn 35 to 50 more calories each day," says Gonzalez.

Studies have shown that adding weight training to your cardio routine increases afterburn, so that once you've showered and settled into your desk chair, your body will continue to burn calories.

In one study published in Medicine & Science in Sports & Exercise, women who lifted more weight for fewer reps burned nearly twice as many calories during the two hours after their workout than when they did more reps with a lighter weight.

And research has also shown that strength training burns body fat more exclusively, while cardio alone can cause both fat and muscle loss.

Weights do your body good the way milk, most likely, does not. A regular weight-training routine has been shown to significantly increase bone density, which can help protect you from osteoporosis down the road. This came as a shocker to us, since most people consider cardio workouts to be the only thing needed for a healthy ticker. But, an American Heart Association Survey published in the journal Circulation found that a panel of cardiovascular experts agreed: weight training could reduce blood pressure, improve cardiovascular function, and reduce diabetes risk. "One of the studies the panel looked at showed that 12 weeks of strength training improved participants' walking endurance by 38 percent," reported the New York Times.

5. It's important for injury prevention and pain reduction
Stronger muscles mean stronger connective tissues and stable joints, which can help you avoid injury while working out or running—and in general.

And it's a good pain-reduction technique, too. Strengthening lower back muscles has been shown to be effective at alleviating low back pain in dozens of studies, and it can even ease discomfort associated with arthritis and fibromyalgia.

Holiday Recipe Week, Day 3: Warm & Boozy Buttered Cider

You may be completely over the holidays now, but your NYE guests will still expect libations.


This hot buttered cider from The Healthy Voyager will fool your guests into thinking you're all grown up and sophisticated. And if you really can’t stand the thought of another hangover, you can make a special batch, sans rum, for yourself and any under-age party guests.

What You Need

7 cups apple cider, or apple juice
1/3 cup brown sugar, packed
1 (7-inch square) 100 percent cotton cheesecloth 
4 sticks cinnamon
1 teaspoon whole allspice
1 teaspoon whole cloves
1 lemon peel, cut into strips
1 1/2 cups rum
1/2 tablespoon Earth Balance
6 to 12 apple slices, thinly sliced

How to Make It

Combine the apple cider or apple juice and brown sugar in a large saucepan. For the spice bag, tie cinnamon, allspice, cloves, and lemon peel in the cheesecloth. Add spice bag to cider mixture. Bring cider mixture to boiling. Reduce heat and simmer, covered, for 15 minutes. Remove and discard spice bag. Stir in the rum. Pour cider mixture into mugs. Float about 1/2 teaspoon Earth Balance on each. Top each serving with one or two thin apple slices.
