Honey Wheat Loaf

1 1/2 c. warm water plus 1/4 c.
2 T. butter, softened
1/2 c. honey
2 c. bread flour
1 2/3 c. wheat flour
1 T. cocoa
1 T. sugar
2 t. instant coffee granules
1 t. salt
2 1/2 t. (1 pkg.) yeast
5 drops caramel food coloring
1/2 c. cornmeal
Honey Wheat BreadMay use a bread machine…if so put in 1 1/2 c. warm water and then the butter, honey, flours, cocoa, sugar, coffee, salt and yeast on top. Pour over this mixture a blend of the 1/4 c. water and the caramel coloring (this is optional–totally for a dark colored bread). Then let it rise. When done punch down and separate into eight loaves. Dust with cornmeal and bake at 350 for 24 minutes.
If making by hand, mix together the flours, cocoa, sugar, coffee, and salt in a large bowl. Make a well and add warm water, butter, honey and yeast. Also pour 1/4 c. plus the caramel coloring to the well. Combine slowly until it is completely mixed. Flour hands and knead for 10 minutes, until smooth. Set dough aside in a covered bowl in a warm place for an hour to rise. When done punch down and separate into eight loaves. Dust with cornmeal and bake at 350 for 24 minutes.
Makes 8 small loaves.
