It's a tiny grain packed with tons o' nutrition. And with kale, chia and fresh zucchini, this salad is not even close to your boring lunch or dinner. Enjoy!
What You Need
1 large zucchini, cut into 1/2 inch pieces
2 cups cooked teff
1 cup chopped kale
2 scallions, thinly sliced
3 tablespoons fresh lime juice
1 teaspoon apple cider vinegar
1 tablespoon lime zest
2 tablespoons olive oil
2 teaspoons Barlean's chia seeds
1 large head Bibb lettuce
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
2 tablespoons fresh cilantro
How to Make It
In a large bowl, combine zucchini, teff, kale and scallions. In a separate small bowl, whisk lime juice, vinegar, lime zest, olive oil, chia seeds, sea salt, pepper and cilantro. Pour cilantro chia seed dressing over zucchini mixture; gently toss to combine. Carefully break apart pieces of Bibb lettuce and place into serving dishes. Portion teff mixture on top. Enjoy.
