I love the delightful aroma of freshly cooked pancakes! It's a wonderful way to start the weekend or any morning. I want to share with you a delicious and very healthy pancake recipe that I recently created. Not only is it gluten-free and dairy-free, but it has other great healthy ingredients. I use xylitol which is an excellent sugar substitute and can be found at most health food stores. Xylitol is easy to use because it has a 1:1 ratio with sugar. Yet, it has 40% fewer calories and is very beneficial for the health of your teeth and gums.
The recipe also contains ground flaxseeds that help to balance your hormones and support both your estrogen and progesterone production. This is tremendously beneficial whether you are in menopause or are dealing with estrogen dominance related issues like PMS, fibroid tumors or endometriosis. Flaxseed also supports your heart health and is a great source of alkaline minerals. Flaxseed has so many health benefits that it is one of my favorite foods.
You can top these delicious pancakes with maple syrup or fruits such as strawberries, raspberries, or blueberries. These wonderful fruits are excellent sources of vitamin C and soluble fiber. They are also rich in antioxidants which help to protect our cells from damage and help to prevent disease and slow down the aging process. Enjoy! Love, Dr. Susan
Flaxseed Pancakes with Berries Makes 8 pancakes (serves 2-4)
1 cup gluten free flour
1 cup unsweetened rice milk
1 egg
1½ - 2 tablespoons xylitol
1 tablespoon ground flaxseed
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
3 tablespoons almond oil, keeping 1 tbsp. for cooking
Maple syrup (optional)
Strawberries, raspberries and blueberries for topping
Mix the dry and wet ingredients in separate bowls. Combine the ingredients and mix thoroughly. Cook on medium heat and use a small amount of oil to grease the pan if needed. When pancakes bubble in the center flip and cook for 1-2 minutes or until cooked thoroughly. Serve with maple syrup or strawberries, raspberries and blueberries. Delicious!
